Dough Ball collapsed, held too long ?

Mixed a few dough balls(fazzari, hybrid reinhart) on the 23rd, used one on the 24th and attempted to use the others tonight.
They were all wet and goopy, I noticed yesterday that they appeared to be collapsed in the bags.
Still tried to use them but made a mess of them and ingredients.

Can balls like these be ever saved ? How is it that they turn so wet ?
