Uuni Pro | First Pie

My maiden voyage with the Uuni Pro is official. I was pretty impressed with this thing. I used a combination of coal and wood, firing coal to preheat, and then popping on some wood to get a nice roaring fire ready for pizza.

I did a pepperoni, shallot, chorizo and basil pie. I shredded the mozzarella by hand for some of my NY Pizzas, so I used that vs mozz slices.

Dough is:

00 Flour (100%)
Instant dry yeast (1.5%)
100% hydration sourdough starter (15%)
Fine sea salt (2%)

Mixed in a kitchen aid, balled then in the fridge for 36 hours.

This pie cooked in 75 seconds at just over 800 degrees.

I'll continue working with it, and my dough recipes, but loved the results. Love that I can burn coal, wood, coal+wood, pellets or gas. Possibilities are endless with pizza and other foods.

Gas burner is delayed, but that gets the oven hottest. Excited to cook a Neapolitan pie over 1,000 degrees.

Figured this group would be eager to know. I know most love the Blackstone, but that thing is too large and too ugly for me.

Ouch! I'll let that go as your pizza and oven are quite nice looking.

Typo or did you really use 10% salt?

Hahaha. I mean it all in love!

I used 10g of salt to 500g of flour, so 2%. Definitely a typo

Congratulations on your beautiful oven! I wouldn’t go calling the blackstone names in here though! I don’t use one but it is hugely popular!

So how is the pro? What’s different about the previous two performance wise?

Thanks! Next weekend I'm doing 5 pies and 2 will be NY style with the other 3 being Napoli. It'll be the first time doing two different styles/doughs in the oven. Will keep folks posted.

Yes, I was part of the Indiegogo, but pretty late. I ordered mine early September, and got it November 1st.
