Tangzhong - Anyone used this in Pizza

Hey Guys

Most of you may already know of a Japanese technique called Tangzhong - it's where you make a Roux out of Water & Flour.

Has anybody had success using Tangzhong in their Pizza Recipe? I'm wondering whether it would work as well as it does in bread.

It's been discussed here a couple times, but I can't remember if anyone ever actually tried it.

Looks like I'll have to since no one has tried. Just looking for some Do's & Don'ts when attempting this technique.

I've only used the technique in cinnamon rolls and sandwich bread.
You found any improvement of your end product ? Is it worth the little effort?

It does seem to last longer, but with something like cinnamon rolls they don't last very long anyways, so it's hard to tell. I think since it's designed to retain moisture and stay soft it might not be desirable in pizza depending on the style you're going for. I think that's why I never tried it as most of my tasters tend to prefer a crispier pizza. It would probably work really well in bread sticks.

I use this in bread all the time it makes the bread so soft like it had loads of chemical dough conditioners added to it.


Never tried it with pizza but will give it a try someday..

I use the tangzhong method when I make pizza dough and I love the result.  It's still chewy and also light.  My recipe is posted on my site: Myhungryboys.com
