Ive been making hand tossed pizzas for awhile so I tried making a calzone... that was a disaster the cheese leaked out and stuck to the stone, the dough wouldn't slide off the peel, it wasn't bad though so I got a pizza pan from a local pizza shop that doesn't use them anymore ( they use these flat disks with holes in the bottom now ) What a major help. I opened the pizza by hand then added the chicken folded it over then put a little more cheese on top ( because I think it makes it a little better ) put it in the oven once the cheese was melted on top i removed the pan and cooked it directly on the stone. Now this isn't my best on looks but man this was AWESOME! my dough tasted great and the bottom was perfect texture I was really proud of this!
