In remembrance of Vincenzo Pagnani

I would like to spend few word to remember Vincenzo Pagnani, owner and pizzaiolo of Pizzeria Brandi in Naples, the place where the pizza Margherita was given the name, who has died the 25/08/05 aged 69.

He was a wonderful person that has spent his entire life in the pizza world. He started at Brandi has the boy who call the customers from the street By shouting about how good the pizze were there.

He was a firm believer of the importance of using a Crisceto in dough making and he insisted that the tradition was respected by the younger pizzamaker now working at the pizzeria.

I really hope the tradition will be carried on.

Sorry to hear this master pizzamaker passed away
too young in my opinon

That's very sad to hear.

My first pizza recipe came from "food of Italy" which had a four-page
double fold out on the Brandi's pizzeria. I have looked at those pages
countless times in my many nights of pizza making.

I will be visiting Naples at the end of the year, and will make the pilgrmage
to Brandi's.
