It's an amazing baking surface- not just for NY pies but breads also. Sometimes I come across stones with attractive "veins" like this one here. Never used, thinking aboit hanging it on a wall. Really cool to look at.

Friday night was pizza night, we had some family over and it was a great time.  The kids wanted pizza de calabresa(sliced sausages pizza) and pizza de mussarela(plain cheese pie), and the adults wanted familiar brazilian toppings, so we did onion, bell pepper, ham and sausage. 24 hr CF dough, 62%HR + 1.5% canola oil. 1.7% salt, 1% mascavo sugar, .3%CY and 1.6% EVOO.

My nephew Matheus, who was most excited to see his favorite pizza Pizza de Calabresa getting pulled out the oven seconds after he arrived!

I made a new mexican new york style pizza tonight. Green chili sauce, spicy shredded chicken, black beans, diced green chilis, topped with a light sour cream sauce.
