Here is a my favorite white sauce.
4 tbl extra virgin olive oil
1 cup heavy cream
1 tsp dried thyme
1/2 large onion, fine chopped
4 cloves garlic minced
Salt and pepper to taste. Sea or kosher. Fresh cracked pepper is best. Use a pinch or 2 of salt and a pinch of pepper.
Heat sauce pan, add olive oil to medium heat. Add in onion and cook till translucent about 4 to 5 minutes. Then add garlic and cook another minute, do not brown garlic. Add the heavy cream and stir slowly, and lower heat to low. Occasionally stir and cream will thicken, about 3-4 minutes. Remove from heat, add thyme and stir in. Let cool and put in fridge for 1 hour. Remove and let warm up then put on pizza , makes 2 12" pizza...
