mobile pizza oven?

Hello everyone! Im in the process of building a mobile N.Y. style pizza truck.My ? is, should i use an electric oven, such as a DOYON FPR 2 ,or something like a gas BlOGGET 1000,or a small impinger , Space is min. just going to do pizza only.Ive learned alot from this forum,and I thank you all LiL LEO

Well, I think one point is pretty important, if you run gas, you can operate anywhere, basically. If you run electric, you will NEED to e plugged in (AFAIK), and you would likely need 220v.

Anyone else think this?

rideit,I would be running a generator 6k atleast for electric. Im just wondering what other mobiles are using.     thanks for your input.

Hmmn. I guess i am thinking noise would be a significant issue for many mobile locations (concerts, festivals, etc), so a generator would be problematic for the kind of voltage that you would require.
just a thought!

yes, gen.noise is a problem,but ive seen gens. with a64db, which is acceptable.does anyone have any idea what STREETSAPIZZA use for an oven?

It sure seems like a propane oven would be easier, cheaper and more economical then a electric one for a mobile operation.  I also think gas fired ovens would be much easier to find on the second hand market since they have the vast majority of the market share.

I'd guess most are natural gas. How much trouble is it to convert to propane? You can't simply feed propane into a natgas oven. Propane burns way too hot.

shuboyje, Ive been checking out a few used gas fired ovens, and it seems to me that a bloggett is the way to go.Im going to check out one this sunday. the person i spoke with claims its 48in. wide? She cant find a data plate. Does anyone know if there is such a small oven by bloggett? Thanks LiL Leo

I think pizza de puta has one of those smaller width Bloggetts.
And as shuboyje indicated, just needs an orifice swap...the regulator may be adjustable to suit your application..be CAREFUL.  ;)
