CPK thin and crispy

Anyone play with duplicating this crust at all?  Tried it today, liked the initial crispiness but it quickly became very much more chewy, had to work to tear off a piece.  Really tasted like it had a good percentage of Rice flour in it, bottom texture was almost like a rice cracker to me.  Anyway, just wondering what others thought of this crust.

I've had it once at their restaurant and once grocery store frozen. Both gave me the same result you've experienced. Member "fazzari" has a cracker crust that is quite similar and much better.

I am preparing to make your thin an crispy recipe that you gave us some time ago...thanks for that. ;)
