Any tips on working the dough

Does anyone have any tips on learning how to work the dough. I've been looking on the web for anything that resembles how the guys at the pizzeria do it (no rolling pins, and they get the whole thing done in like 1 minute). I'm about to just go and ask one of the local shops if I can video tape them so I can practice at home.
