12" pie with Italian eggplant

I had some leftover eggplant, so i figured I would throw it on a pie this afternoon. I also wanted to try putting the cheese on 1st. I kinda like it!
The formula i used is as follows:

Flour 100% (mix of AT and BF)
Water 63%
ADY .75%
Salt 1.75%
Oil 2%
Sugar 1%
