NY Style - hand kneaded home oven

Dear pizzamakers,

I am looking for a NY style recipe that can be used with hand kneading (I dont have a mixer and can't get one in the near future). I usually bake pizza's in my home oven which gets to about 500F (250degrees celsius) but can go a bit higher if I tweak it a bit. Usually just put the pizza on the metal plate that comes with the oven or on a baking sheet (for easier transferring the pizza from my counter to  the oven).

Due to the sheer amount of recipes I find it difficult to find a cold ferment recipe that is suitable for hand kneading.

As I mostly do only two to four pizza at a time, so I often hand knead.  You could hand knead just about any NY style dough.

 - Mix together water salt and sugar (if using)
 - With a large spoon or you hands, mix in flour and yeast.
 - With your hands, squish the oil in (if using) so it is well distributed
 - Cover and let rest for 20 min or so (this step really helps)
 - Knead away
