Tonight I made 9 pies to try out different things on my new Ooni Pro oven cooking with coal and wood. Lots of stuff here. Going for a NY/ New Haven kinda thing. There’s lucali style rolled out, red apizza and a few more. Dough is power flour, 58% hydration, 0.4% IDY, 72hr cold prove. Cooked between 650-750f, average 3min bake time. This is my first batch with power flour, my first time using cheese from RD. I REALLY liked the Belgioioso fresh mozz (special pizza formula.) It was way drier than regular fresh mozz, almost had a buffalo mozz like texture.

Made two pies with the Breville pizzaiolo. Wanted a longer cook so set the top element to 675 which made the cook a little over 2 minutes. Both pies have the same toppings, broccoli rabe, sausage and mozz but one is a white pie while the other is a red. Pretty delicious and not sure which one I like better!

After years of research on PMF and coming up with an ironclad recipe and work flow I had to change out the bake element in my oven and it's not delivering like the original. That brought cascading issues I'm still trying to sort out. To get the pizza done I've had to increase the bake time by 35 seconds. The toppings should be charred but aren't. The bottom is not up to standards.

The pies are good but I'm not feeling any oneness with them. They aren't mine, yet.

Tonight's pie got a little closer.

The second one looks wonky do to a poor launch, which was most likely the result of too many IPAs

I thought it looked like the Millenium Falcon while scrolling through.

Yes, this forum. I never mixed water and flour before I came here. Learned about the 35° recalibration here too. First thing I double checked, lol.
