I make so many different styles of Pizza because everyone here has their favorite. Last night was mine (and my dad's)... Chicago Tavern. I absolutely love this recipe. The dough recipe is based on "BobGraff's Attempt at Aimless Ryan's Tommy's Pizza Clone" and the sauce is Garvey's amazing Chicago style sauce from the "Pizza Factory" thread. For me, this is a perfect combination and reflects well the pizza's I grew up with in Northern Indiana. Because of it's location, this area has always had a lot of Chicago Tavern style pizza joints. I made 6 and took a few to the Parents for them to enjoy too.. everyone agreed, a great night for pizza. If i get all those little saltine crumbles in the box after cutting... I know I got it right. Here are pics of a couple.

Took a few months off but back at it. Baked in the Breville with 650 top/725 deck for about 2.5 minutes. Hydration was 60%, CF for 4 days. It's pretty close to where I like it.

Remember that you don't absolutely need the most expensive professional ingredients. Sure All Trumps, Stanislaus, and Grande are legendary. But you can make an incredible pizza from ingredients you can find at a local grocery store! Every ingredient here I found at either Whole Foods or Stop and shop!

12" cracker with black olives and an 18" NY with pepperoni, fennel sausage, and jalapeno.  3 more crackers went into the freezer.  :pizza:

Pizza night for the neighbors tonight. Just got a few pics. Caputo pizzeria 00 flour, 62% h2o, 2.8% salt and .15% IDY. Did 3 hrs bulk at RT then 17 hours in the fridge. Out of the fridge 2 hrs before cooking in the Ardore with floor temps at 800 when cooking. A pepperoni, margherita, and dessert pie with dark chocolate, Nutella, raspberry sauce and mascarpone cheese.

Thanks Bill. Caputo Nuvola Super, 63% Hyd, 2.5% Salt, .5% fresh yeast. All in the mini food processor for 45 seconds. Two hours @71°, re-ball, six hours @62°

I didn't measure anything for the topping but used, in order:

Parm
Chopped clams
Clam juice
EVOO
Parsley, oregano, thyme
Red pepper flakes
Black pepper
Sliced garlic
Parm, post bake
