Newbie here, still learning very much. Made a pan pizza but needed more dough, it was way too thin and gummy. My "new york" pizza looks more like tasmania but the flavour was there. I still need more top heat and I'm not sure how I can get that when my broiler is in a seperate compartment. Any advice is greatly appreciated, quite envious of everyone else's pies here.
You could transfer the pizza to the broiler for a couple minutes at the end

I guess it depends on the compartment.  But yes - is it an option for the pizza maker to put the pizza back on a peel, or maybe transfer to to a pan that would fit in the broiler?
I said to my little one, "come here so I can change you".
He said "change only comes from within".  :-/

Great job.  I always love the spider web effect in the rim.

Switched back to CM 00 reinforced flour from the regular 00. Makes for a very light crust. Good thing I like it because I have about 49lbs left.  :D

Tuna, avocado mayo, pesto, swiss and Cheddar/Gruyere that Costco had. Jalapeno slices.

Another go at a bar style. Just about 12-ich. Tf =0.06. Funny how one's pizza tastes change. Mine are now, in order of preference: New Haven, Bar Style, Neapolitan.

Gotta love that incredible airy crust. Probably one of my favorite pizzas I've made yet!

5 days cold ferment

00 flour + T65 french flour

homemade red pesto
shredded mozzarella
minced meat

cooked 8min30 on a Steel

was very tasty overall, some crispness on the undercrust and softness on the rim crust, also a very good flavor from the red pesto sauce

I did a two egg omelet in the Anova Precision Oven. If you don't fully grease the plate/pan it will not come out in one piece so I got 3 or so pieces. Under the infrared broiler it puffs up like a crazy souffle and then falls back to earth.

Eggs, provolone, pesto & tomatoes. CM 00R, sourdough.
