Pizza al taglio.  Bianco Di Napoli tomatoes, Locatelli pecorino, Saputo Premium Gold mozz, sweet Italian fennel sausage, peppadew peppers, red onions, basil, oregano.   Flour - 100%, Water - 70%, Oil 2%, Salt 2.25%, IDY -0.3%.  TF=0.11.

The middle son is dating a beautiful young lady who has been hearing Dad's pizzas are better than bought ones.
So when I heard she was going to be in town for the weekend, I opened that packet of 00 flour that's been languishing at the back of the cupboard and did my best.

Work flow went like this:
600 mLs water in the wife's Mixmaster.
Sprinkle in 1/2 Kg flour and 1/2 tsp yeast.
Mix for a while and then let sit for 1/2 hour.
Mix 4 tsp salt with other half the flour.
Restart mixer and add the rest of the flour.
Mix for ages. Turn out into a bowl and cover with cling film
Leave on kitchen bench overnight.
Discover at midnight that it is trying to climb out of the bowl.
Knock it down and go back to bed.
Get up in morning and knock it down again.
Ball it about 13:00.
Find the balls have amalgamated into one giant sheet in the proofing box at 14:30.
WTF is going on with this batch?
Re-ball with a fair dash of bench flour.
Max out oven temps. 550C IR gun reads "Hi"
Let fire die off, let oven cool for an hour.
Start using about 18:30.


I often agree with the premise that you should not buy typo 00 until you can explain why, but it really does make nice dough.
Good oven spring, crisp on outside extremely soft and tender inside.
Failed to get a picture of the 90 second margherita.
Here's the last two of the evening.

Thanks guys! Yes, Bob. Whole Foods Spicy Italian that was glazed with honey/water for browning and canned mushrooms sautťed before topping. Also my first thin without oil.

12hr RT, 48hr CF, 2hr RT before stretch

cb, it was whole milk.

Funny story, they told me it was east coast blend and no one had any business using another cheese for ny pizza. They brought out the package to show me and when I pointed out it wasn't east coast blend, the guy said "you're right, forget all that stuff"  :)

still, they were very nice, the cheese was wonderful and I would have happily paid double what they charged me.

0.15 TF pan pizza used around 80ml oil in pan.. 14"


8 hours room temp like pretty much all my pizza

Mixed dough,  started to shape it with rolling pin and hand to rough size.  Had to take some breaks to relax the dough of course as the doughs unfermented and just been mixed.

Let it rise in the pan of oil for 8 hours.

Baked about 15 mins  180c on a slightly preheated steel (I had oven higher then turned it right down to 180c before I put pizza in)



12oz of mozarella cheese and some parmigiano reggiano shavings and some bog standard pepperoni




Pizza was about as thick as my thick thumb soft like a pillow should have taken pic of the side.


I'm trying to use less oil, I started with 100ml but with 80ml there seemed like I could use a lot less.

First pizza of the 2019-2020 season. Same recipe as I've used for years; this time with bacon and onion toppings. Best dough I've ever made; no idea why but... it was a joy. Unfortunately the pie came out a bit underdone; no idea why but... maybe I should factor in the oven's new bake element. Or that I entirely redid the deck, lol.

Great taste but so isn't a sample of cheese at Fry's.

I'm not ashamed but I am a little embarrassed posting a pic of this pie after the super fantastic pizzas shown here in the recent days.

Grr! I had it down. Now I've gotta dial it in again.
