Two pies tonight with cheese first and sauce on top.  First is just cheese and sauce, second is "Mean Green", cheese, sauce, then green olives (spanish and castelvetrano), jalapeno (pickled and fresh), green onion, and green pepper.  No complaints!

Pizza margherita in my Zio Ciro oven.
Followed a different video recommended on this forum on how to stretch the pizza and it already came out a lot better!

Cooked 2 pies on my BGE with Pizza-Porta accessory. Ran a fan from DigiQ controller with pit probe attached to controller but left outside of BGE. Dome temps >750 F.


Dough is 65% hydration, 48 hr ferment at 66 F. Salt and ADY. Flour Caputo 00 pizzeria, blue bag .


result were good to my taste.

It's the Zio Ciro Subito Cotto 80 (wood), it's the older model since the new ones weren't/aren't available yet here.
I'm very happy with the oven, heating it up takes about 1 to 1.5 hours and it retains the heat very well, it was almost freezing outside but i didn't have to close the lid between making the pizza's. I was going to buy Saputo tiles but don't need to since the standard floor is perfect enough and never burned any bottom (so far), i try to bake the pizza's when the oven floor is around 380 - 400 C°. You can go higher but i don't really prefer the super soft napoletana pizza's.

should you have any more questions about this oven let me know and i'll be sure to answer them:)

That slice photo looks like the absolutely perfect amount of cheese and degree of melt for that particular slice, imo. Excellent!

Thanks! It's secretly not a white pie; there is tomato sauce under a lot of melted whole milk mozzarella. Other ingredients included diced shrimp, cilantro, and scallions.
