I like the look of all of your pies! Excellent creativity! I want to try some of these. A friend of mine and I finally finished building our oven and have been baking over the last month or so. We're actually in Raleigh...I'm curious where you get your ingredients, mainly the mozzarella. I haven't really found something that I'm super happy with. I'd also be interested in knowing how you overcame your early struggles with a little too much char on the bottom. We're currently going through the same sort of thing. I'd be interested to know what worked and what didn't for you.
