From what I can understand, this oven has SS walls and ceiling with stone or other refractory material for the floor. Is that correct? What is the insulating material, and is it equally placed behind walls, ceiling and floor?
What is the recovery time from one pizza to another re internal heat?

Thanks, I can see, from the photos, that the front wall is refractory, but my question still remains. Is the inside of the refractory lined with anything?
