Hello - curious to know 2 things from your experiences with the gas burner:
1) do you leave the door on for pre-heating ?
2) do you use/keep the heatshield inside when cooking with the gas burner ?

Sorry for the delayed response I'm not getting notifications on this thread anymore. Not sure why?

1) Yes I leave the door on while preheating. I do use the pellet scoop - chimney lid to prop the door open slightly. Don't know that I need to prop the door open but the burner sounds better, not as loud.
2) Yes the heat shield is still in place.

I have used an UUNI in the past with pellets, it does a wonderful pizza.

Do you not lose  :'(  the great flavor of the wood smoke using the gas burner?  ??? ???

Yes a little something is lost when using the gas burner but they are still good pizzas. The only reason I use the gas burner is for ease of operation when we are traveling and have limited time between games for a good meal.
