After a less than stellar attempt at making bagels a while ago, I finally got around to another try. I watched an online class on making your own bagels, bialys and pretzels by Sim Cass. It was really helpful!

Decided to make cinnamon raisin bagels and I was very happy with how they turned out!

Thought some of you bagel enthusiasts might enjoy this video from Food Insider. It has inspired me.  Poolish is mixed and tomorrow will be baking day.  Two dozen total in assorted flavours.  Can't wait.

Will be giving most away to family members.  They freeze well and once toasted are almost as good as freshly baked.  They're fun to make but I wouldn't bother if only making a small batch.

thanks for posting the video! Absolute is just down the block from our apt but the line is so long on weekends that we usually opt for something else. Definitely worth the short walk if you're checking out mamas too. Ess-a-bagel is my favorite but, as they learned in the video, russ and daugter's has the best salmon (but not the best bagel).

when I first started working in nyc, I grabbed a bagel every morning on the way to work. Over the years, fighting weight gain and a slowing metabolism, I cut down my bagel consumption to about once every month or so. What a drag it is getting old!

now I'm hungry!

Only sourdough.
Spiral knead to a little beyond window-pane if your mixer can handle the load. 
Bulk ferment 1 hour, covered, room temp
Shape and proof 16 hours in refrigerator uncovered, 3 hours room temp covered
Boil in lye solution 1 minute
Bake convection 425F in pan on stone 10-15 minutes

got up in the middle of the night to get a glass of water to find my college age d up making bagels for the first time. she’s a great cook and started her own muffin business in hs but has never prepared or baked bread dough. the bagels proofed through  the morning and she baked around lunch time. as good as a nyc bagel. i feel silly complaining about the lack of good bagels in our town when we could have been making our own!

My last round, slightly modified for the pandemic.  Used dry malt extract in place of malt syrup and my sourdough starter in place of yeast.

They probably could if the public demanded it. Most people have no clue what a bagel is supposed to be like. Blame Noah's bagels for the mass infiltration of steamed bagels. I hate that dude.

Bialys.

The formula is from the now out of print book inside the Jewish bakery, By Norm Berg (RIP) and Stanley Ginsburg. Sections of the book can be had in PDF for a few bucks. The topping is dehydrated minced onion, poppy seeds and oil.
