In Israel there is only one company who is producing different types of flour. Their best type of flour for pizza is a bread flour, 11% of protein, and they add to it vitamins and polic acid, so it's more like a drug then a flour.
Few days ago, I noticed that a new company is importing Italian goods to Israel, one of them is Pivetti flour, and they are offering 00 flour, 0 flour, mantibota flour, and pizzeria flour. The website of Molino Pivetti doesn't tell much, so I hope if someone is familliar with this brand.
