Singas Pizza - Dough

Anyone know Singas Pizza (several locations in the NYC area)?  Can anyone suggest a recipe for dough like theirs?  They bake their pizzas in standard pizza ovens, but rather than putting the pizza dirctly on the oven floor, they put them in what look like professional (i.e., heavy construction) 9" pie pans (the kind bakers use for making layer cakes).  Also, they take 165-20 minutes to bake, so I imagine the baking temperature is relatively low.
