Bread Stone (FGM) 1400B Build in Flower Mound

I'm excited to share that after 4 years of planning (and saving to fund it), the outdoor living project launched and is coming together quite nicely.  We have enough progress that I actually pulled the trigger on the FGM 1400B today from Antoine.  I'll post a few pics (and try not to annoy folks with too many) of the build as it comes along.  It's a big enough project that I will not be directly hands on -- but due to the luck of geography, Antonie will be overseeing and helping with the build when the time comes to actually build the oven.

While I've loved the go-to BGE for my previous :pizza: cooking, I'm super excited about the new oven.  In fact, it's been the centerpiece of the entire outdoor living project and as the project has grown, the focus is still around the oven.

Comments, pointers, tips, etc. are all welcome.

We are delighted to have Antoine take an interest in the project!  As a fellow small business operator, I know how valuable his time is.

Most of the progress right now is on the cabana structure, but the oven build is scheduled for the second week in August.  I'll post some prep-photos leading up.  The recessed area under where the oven will sit is for wood storage off the back face of the patio.  That should take shape shortly and once the concrete block is in place to show off the actual placement of the oven it'll make it much easier to visualize the overall look and feel of the installation.  Right now it's just lines on the cement foundation.

A little progress today.  The concrete blocks were placed to build up where the pizza oven will sit (underneath on the back face will be storage for wood... that will be much clearer as the build progresses).  Tomorrow is "the big pour" so there should be decent stuff to show for progress, though not much on the exciting front on the oven build.

Because of the interest that our members have in what you are doing, I fixed the misoriented photos. This was an especially difficult operation because all of your photos had generic titles, like image and image(1), etc. However, in the attachment list, they were all labeled as image. This meant that I had to save all of the photos, one by one, including the ones that were properly oriented. I also had to change the titles of all of the photos. I then deleted all of the original photos and replaced them in the proper sequence in your original post. I was lucky not to screw this up. Unfortunately, there is no way of fixing only the misoriented photos. All of the photos have to be saved and put back in the right sequence once the misoriented ones are fixed.

In the future, you might want to give your photos distinct titles so that it is easier to fix them if they come out misoriented. You might also want to use your desktop to store the photos before posting to be sure that they are in the proper orientation. The forum's software is unable to detect misoriented photos, and there is no current fix for this problem.

Apologies for the added work.  Entirely unintentional.   :-[   I'll give them unique names in the future.  I couldn't figure out how to change orientation on the iPhone posting those last night through Tapatalk.  I'm not sure I'm in love with that app for use on the forum.  I think I'm sticking to the standard WebUI going forward.  More photos and updates as things progress.  Today is a slow day.  Forms removed from the concrete and cleanup tomorrow.

No apologies needed. It's just that after fixing over 500 misoriented photos since we started having the problem, I'd like a rest now and again. So, I am trying to have our members help with the problem.

Had some progress on the wood fired oven build side of the project today (finally...).  Attaching photos of the form build for the concrete foundation of the oven.  They just poured the concrete.  Once I get those photos, I'll post the actual concrete pour (with forms) and if they pull the forms, I can post those today too.  If not, I'll post again Monday.

Need to follow up with Antoine and see if he knows when our build date is for the oven itself.

Forms removed this morning.  Thought I'd share some progress photos.  We're waiting on the overhead structure to get securely in place before we have Antonie out to help us get the oven built... so a little more delayed than we had anticipated, but we expect to see some progress on the load bearing columns and big timber beams for support this week or next.

I'm hoping I can get things to the point where I can fire the oven up before all the building around it is done... but not holding my breath.  The anticipated "end" date to the project (phase 1 of the project) is around the end of October.  Crossing my fingers for oven use by end of September at the latest...

Once the oven is cleared for use, I'll post here and we'd love to host an informal gathering.  I'm practicing (as much as I can) on the Big Green Egg.  Did 8 pies yesterday.  First 2 were just shy of 90 seconds.  Pizza stone at 875F, but dome only just shy of 700F.  By the end of the 3rd pie, the stone was cooling.  4-8 were on a stone that was rapidly losing heat and cook times went to 4-5 mins.  But for dough practice, ferment times, flavor, and crumb we're making progress.  So as long as everyone's patient with the learning process and evolution from BGE to WFO, early use after the oven is cleared for use is absolutely open to forum members that would like to participate!

Confirming delivery date for the oven is this Friday and build for the oven is Tuesday next week. I'll shoot photos of the process (and likely the oven too on delivery to show how it is delivered and what to expect)
