51% Extra Coarse Whole Wheat Experiment

The schools in Michigan require bread products to contain at least 51% whole grains so I decide to play. This is 51% extra coarse whole wheat flour sourdough cheese bread. The balance of the flour is a combination of bread and high gluten. I think I like it. I also par baked a crust to deliver to a school food director tomorrow to see how he likes it.
