A Bake tonight amid howling winds and rain, but not yet snow.


The “old” mix of dough and timing and quite happy with the results, with notes to self on things to change. A friend ventured to Vancouver a large Center nearby and visited my favourite Italian store and was able to get Buffala Mozzarella from Italy so I just had to fire up the oven. A Margherita, was wonderful in taste and texture, the following grape tomatoes, Capicolli and Kalamatta olives was good but wet . .  .not to mention my overwhelming desire to add another piece of oak while getting the pizza ready. Burnt. I cut the tomatoes early, placed on paper towels cut side down, turned to the other side and they still released more water than they look like they could. Have I learned, likely not, thy look so good!


A lot of prep for 2 pizza, fire still hot, wind still howling, wine still good

Thank You Renato, they are a very long ways from the quality and presentation of your pizza, but I will get there!

Thank you thezaman, I used Kalamatta, halved and drained on paper towel. I believe Steph mentioned the amount of water that comes out of tomatoes - I cut them 2 hours early, put them in paper towel, squeezed gently, muttered drying incantations and they still dumped water, thereby changing the texture of the cheese. Next time I will  channel my Omid and put fewer on!

They both look so good! I feel no burn and see no moist, but I'll take your word for it.

Preparing toppings can be a lot of work. Some times, especially after large parties, I swear: "next time only Margheritas". But after a few days that's all forgotten. :)

We recovered . . Apologies, a selection of smoked salmon, a salad, three pizza and a few bottles of Zinfandel made the deal. A nice evening.
64% hydration, .02% IDY, 3% salt, 15 hr bulk, 91/2 hr ball at ~20°C pluviometer start 16 end 29.
  • Margherita with prosciutto salami
  • Italian Sausage, mushroom, orange pepper and Taleggio
  • WTF . . . Wow that’s fancy? Quattro Formaggi with piped Marinara sauce and minced basil, a work in progress
Considering the worry it wouldn’t be enough, guests would have shot me if I did one more pizza . . . Quality control? Hope not!

Greg, creative as always: A maritime themed quattro formaggi with a perfect ship steering wheel from marinara sauce. I sense the start of something great here...

As always, your margherita is to die for. It looks perfect to me. :drool:

Always great looking pizzas Greg.  As I have said many times, I just cannot achieve the beautiful cheese meld you always show us!  So glad the shortage of pizza was made up with some delicious smoked salmon and of course a nice Zinfandel!!

Arne, thank you . . . . I have never before sketched out a plan for pizza toppings, hate drizzles from a squeeze bottle but had an idea I wanted to try. I had the feeling I could hear Pulcinella laughing at me but carried on, not sure there will be a repeat but fun. I thought of the Scarpetta as I was enjoying the flavours. And thank you, I love a Margherita!

Scott, Thank you! However I am not sure you can attribute the cheese melt to any skills, far more likely is that the inexpensive Costco Canadian cheese melts as it should. . . . Afraid of fire? We are using the same oven and I believe the same temperature, two daring Pizzaioli with a glass of red wine . . . What could possibly go wrong?

It is of course a long way from being food. It is all an experiment, a fun house where you get to change and try, at this point it is not to feed us, but a combination of food and entertainment, at times drama, at times comedy and you have to laugh no mater what happens, there are not a myriad of people waiting to be fed, just us. And yes, some experiments, they may be getting more subtle, but fun to try. It was just the 2 of us tonight, so of course, no pressure! Have you met Sharon? Each pizza was an experiment as was the dough. 66% hydration, 3% salt, .019% IDY, 14.5 hrs bulk, 11 hrs ball at 21-22° C skyrocketing pluviometers 16-32!
Good fun, if you are in the area . . . .  .




  • Margherita - have noticed some who leave/plan a wide cornice, so thought I would try keeping toppings away from the edge. In doing so changed my cheese cutting and apparently added zits and blisters, hope it is not a virus! Great dough and texture here, must be imported!
  • Fire roasted grape tomatoes, Kalamatta olives and Frisée. Cheeses were fiore de latte, Taleggio DOP and Grana Padano. I confess to trying a band of last weeks marinara sauce piped under the cheese, hoping it would bleed through, revealing wonderful things, eyes better than mine will see vestiges but phfffft! Why bother.
  • Fresh colourful peppers, Capicolli and spinach,fiore Di latte and Grana Padano. By this time we were stuffed but it looked and tasted very good

Wow, that Tomato, Kalamata and Frisée Pizza has a great, colorful look! Need to try that! How did you fire roast the tomatoes? While heating up the oven?  :drool:
