Made some gluten free pizzas today in the home oven. Several friends/customers have asked if we serve gluten free pizza so I did some research. Made a dough similar to the Cooks Illustrated recipe. Par baked them and cooled at room temp for several hours (pics 1 & 2). Topped and baked the pizzas at 500 F for 10 - 12 minutes. The flavor was very good on both pies. The crust had a crunchy bottom with a chewy center. For a first try I was happy.
