Pizza Naturale - Milan, Italy

I was in Milan for one day on business trip.  We passed by Pizza Naturale and stopped for lunch on the way to a meeting.  Pizza Naturale is actually a chain and the location I visited was Via Gaetano de Castillia 24.  They had a wood fired oven running at 300 C per the mounted thermometer but the pizzaiolo said it was 400 - 450 C.  A big difference from the temp gauge.  I was with a colleague so I didn't get a chance to chat or watch more.  I ordered the margherita di bufala.  The pizza had nice flavor.  It was sauced well and had a little more cheese and less basil than I expected.  Per the description there is both fior di latte and bufala mozzarella on it.  There some inconsistencies between spots on my bottom crust.  The pizza had some very soggy spots and some well done spots which probably would have been more noticeable if I hadn't eaten with a knife and fork.  Also I noticed that my crumb was darker than my colleagues pizza.  Overall it was a tasty pizza and a good atmosphere.
