Side Dishes

We seem to be decidedly lacking in side dishes here.

In the immortal words of Cartman:

I didn't know they were allowed!  :-D

Seems like many of my favorites could be main dishes if portion size was larger. How are we defining "side dishes"? Not one ingredient, such as vegetables? More like a casserole? I'd like to suggest that if people post any ideas they mention what they like it to accompany.

Or just plain mashed cauliflower - which BTW - if you have never tried can rival the best mashed potatoes.

These all look great, Craig. I may have posted some of these pics in the "What are you eating right now" or some other topic.

Here are some ricotta gnocchi I made. These were served with a quick basil-tomato sauce accompanying beef tenderloin but they are just as good with a white sauce. I also made the rolling board and managed to knock that out on a table saw then cut my hand in the kitchen  ::)

Brie in puff pastry with fig jam and individual servings of au gratin potatoes. Served with pork tenderloin with tart cherry and black pepper sauce.

Savory ricotta tarts. Pie crust cut with a large drinking glass, then pushed into bottom of a muffin tin. I make half with egg yolk and parm and the other with fresh basil. People appreciate having a choice and the contrast is nice. I also made the bowl out of Chex and egg whites. It got a lot of attention but if I had to do it again I would use something smaller, such as granola.

This one could be a stand-alone dish. It's a big mess of beans and meat with chilies on chips then topped with cheese, tomatoes, cilantro, onions, more chilies, etc.

That's what I'm talking about. I never make that, but I need to!

5 min how-to beginning at the 9:00 mark. Two things: you can make this dish almost as fast as you can watch the video & I'll be shocked if you do not watch more of this episode (1 of 8, all very good and entertaining). The last 10 min of this episode is heart-warming. Oh, hell, so is the first 6.


Now I am hungry for it :)
