is lucalis pizza soft or crunchy on bottom ? I was trying to replicate not lucali but tonda romana but by looking its similar style to lucali

Working with a handicap cooking on a BGE. Was at 700-750 but donít get the dome temps needed. Was about a 4-4.5  minute cook. Was told it was the best pizza Iíve ever made though.

This pizza looks amazing. I go to Lucali at least once a month and it looks very similar. Please post your sauce dough recipe. Much apppreciated.

I think I came pretty close in my attempt to reverse engineer Lucali a couple years ago.

For the sauce I did 2 cloves garlic sweat in olive oil for a 28oz can of tomatoes with the juice. Cook 20 minutes tops with salt pepper and basil. Immersion blend until smooth.

That is an amazing pie! Looks just like Lucali. What brand of tomatoes did you choose for this sauce?
