Thanks boss! My tasters were raving about this one after a streak of thin crispers! :chef:

I baked this one at 550F like I used to and it seemed to bake up better. I've been baking pies at lower temps lately and using the rack tier to adjust the bake, but I may have to re-think that approach.

12 oz mozz on this 17 incher!

Thanks guys! This one was real tasty, maybe a touch too chewy in the rim. It's kind of challenging at times to get chew in the "slice" without the rim being overly chewy.

Vintage countertop! I believe it's #204 Formica brand laminate. Why I still know that from 35 years ago when I made them.....?  ???

I really appreciate that pie even more now that I'm seeing it without my phone in the sunlight. Real beauty!

What are your thoughts on the sauce ring towards the rim? I like the look, but dont always get it as I need to make a real effort to make it given how much cheese I use.

Thanks!  :chef: I used 12 oz on here, Personally I like the flavor of just sauce + crust towards the rim after eating all the cheese on the slice, but my buddy who works at a NY shop has said I should use more cheese to fill it in.

That's silly, it's personal preference in my view. Next time show him a picture of Joe's.

Late night pie, I don't usually like toppings under the cheese but it seemed to really preserve their flavor this time. This one had real pizzeria flavor, sauce tasted awesome, not sure if that's a fluke or if the toppings directly on top influenced the sauce? Grilled Artichoke, banana pepper, and black olive on this one! 6 oz mozzarella.

I think both pics are the same pie with different lighting, maybe with and without flash.  Either way, they both make me hungry!
