I had to tweak a few different recipes, but I've finally settled on the key lime pie for me.  It has great texture and cuts beautifully.  It is not as sweet as Craig's Aunt Sally's version, so I can actually eat more of it. 

A few things I've realized about key lime pie.  Im not crazy about adding lime zest.  The texture and bitter notes are a distraction.  And oddly enough, I prefer mine without whipped topping.

Adding whipped cream or whatever to the top came decades after the pie was invented. They didn't even have fresh cream in South Florida at the time or if they did, it would have been insanely expensive.

Thanks Hermit.   For a 9" graham cracker crust pie.   (I just buy these at Walmart for $1)

2 (14 oz) cans of sweetened condensed milk (~3 cups)
1/2 to 1 cup of sour cream.  I prefer using 1 cup for a less sweet pie. 
3/4 to 1 cup of  fresh key lime juice.  Note a 1 lb bag (twenty something limes) will give you slight less than a cup, which will work just fine. 
1 drop of green food coloring (optional if you want that slight lime greenish color). 
1 Tablespoon of lime zest (Optional - mix in or sprinkled on top).  I prefer a pie without the zest. 

I used 2cans of Eagle brand SCM, 1 cup of Sour cream, 1 lb of limes (slight less than 1 cup), 1 drop of green food color.   

Whisk sour cream and SCM together until thoroughly mixed.  Gradually mix in lime juice until completely incorporated.   Pour pie filling into crust and bake @ 350F for 10m.   Remove and cool in fridge.  It will set in just a few hours but the pie will taste better the next day.  So make the pie the day before and keep it in the fridge. 

For a more custard like pie, you can also use 4 egg yolks instead of the sour cream.  I'll try out the egg yolk version next but this one with sour cream one is awesome.

@sodface: This is the main reason I have a tape measure in the kitchen ;) Ensures consistent stretching/folding between sessions and planning out cuts when dough is sheeted

Dessert for a family gathering this afternoon. Nectarine Blackberry Cobbler with Ginger Biscuits. People seemed to really like it..a lot  :)
