My loved ones have a pretty good idea what kinds of things I'd enjoy for Christmas. This year one gave me a pan and a bag of adzuki beans to make taiyaki  (Japan) or bungeoppang (Korea). These crispy, fish-shaped pastries are filled with sweet red bean paste. Rather than making the batter with baking soda or baking powder, I used leftover sourdough starter for leavening. Not authentic (I assume), but very tasty.

The secret to making a good Pecan pie is to actually use a lot of pecans. Unlike the store bought pie that has 6 Pecans on top and nothing but goo inside.

Pecans lightly toasted and from a fresh source. There is a local hippie market that refrigerates all of the nuts. Makes a difference.

Pecan pie with bourbon is my Achilles heel. I probably shouldn't say this in public, but I would exchange all of the State secrets for a pecan pie.

Bourbon-caramel sauce should one of the Mother Sauces. For pecan pie or drizzled on vanilla ice cream or grilled peaches or tarte tatin, crepes, waffles  ...  :drool:
