Simone, a couple of silly, silly questions. I am assuming that the system is made to fit a standard gas spigot used on U.S. gas propane tanks. For some reasons, I think - but I am not sure - that the Italian "bombola" has a different spigot. Can you please confirm that it would fit the US tank spigot without any conversion required on our side?

Second, how difficult/practical is it to remove the gas burner to use it with wood? A video would also help.

If it is easy to switch from gas to wood based on circumstances, this may actually be a dream come true...

Grazie mille.

Edit: I might have found the answer to the first question on your website:

"USA and CANADA customers: is inlcuded a dedicated tube and LPG regulator assembled without quick-connection"

correctly questions:
Attached images of LPG regulator actually included for USA and CANADA, not insert quick-connection because your US/CANADA regualtor is very easy to use

To remove the gas burner there is the video in this support page, in this days i add other video, and in future i add video for any customer questions, for fast and easy customer service

Many info in this italian video by Marco

Marco had bought a preview
In the actual last evolution: the gas burner box is gunmetal color, and isn't necessary the screwdriver to block the gas burner, is easy to block manually

REMINDER INFO for correct use of the door:
DOOR with HOLE -> gas use
DOOR with GLASS -> wood use

In the model Passione and Bollore isn't included Spartifiamma and Alzalegna

The gas pizza ovens is only for OUTDOOR USE

Grazie Simone. Would you say that the top temperatures using the gas burner are in the same range of top temps with wood, reaching at least 850-900F? And if so, would you agree that Saputo floor may still be helpful in re-balancing the heat for Neapolitan style in the gas version in the same manner as it helps with the WFO version. In other words, I am trying to understand if Saputo Floor with this set-up would be a bit overkill, perhaps leaving the bottom not as well cooked or if you still recommend it for high-temp bakes.

I see that you answered before re Saputo but I am interested if you could elaborate more regarding this point.

The Saputo isn't essential of any oven, but if you are a neapolitan pizza lovers, i advice because is more easy to manage the pizzas at high temperature, and reduce the risk of burn under the pizza.
Moreover Pizza Party ovens and Saputo is a great combo. We have develop all oven to meet the needs of neapolitan pizza lovers, fast and quality cooking at high temp.

Is there Saputo in this particular oven or was this pizza cooked on the regular stone?

Simone, any idea if there are any plans on making what Norm(Norcoscia) asked about below? (An oven with a wider opening for larger diameter pies.)

If you can make one that has a 20 inch opening and burners on both sides I'm ready to buy - that would be the oven of my dreams!

Hi, just a quick question.  Would it be possible to use a small amount of wood and gas at the same time?  Just to get that wood fired flavor into your pizza?  Just curious...Thanks :D

we don't design in future a type of oven for 20in pizzas, because generally the customers and interesting people prefer the solution "pizza al metro"

mikehags
correct question, i reply for all interested:
ISN'T POSSIBLE USE THE WOOD AND GAS SIMULTANEOUSLY.
We have develop the oven with many pizzaioli and expert pizza lovers, to create a  gas pizza oven with very little difference between wood-burning and gas-burning. The wood fire is the top clearly, but with Passione and Bollore features you can make a very similar taste of pizza, we worked two years, to optimize  ;D

Some italian customers have used dough at 68-70% hydration to make neapolitan pizzas

example the last Currò video

with the features of oven, is possible a very fast cooking, and the sauce over the pizza doesn't burn, and maintains an exquisite taste

if you have available wood, i advice Pizzone or 70x70 oven and you make pizza as tradition by wood, if you don't have wood, Passione and Bollore is great solutions

Simone... Is the front panel with the larger door opening an option with the combo Gas unit? Do you have any specials running for forum members that apply to the Passione?

Thank u Simone,
Received the 70x90 gas Pizza Party Oven in West Vancouver, Canada!!  Very helpful, quick responses. Paid me back immediately when there was a customs delay, I decided to pay the taxes quickly instead of waiting.

Assembly including the stand was very easy.  Just warmed up the oven with gas for now.
Looking forward to the first pizza & will try wood later as well.
It seems to warm up pretty quickly, I'm happy with that. I'm also glad I went with the larger version since with the gas version we see ourselves using it more for other food.

Question: Should the gas burner reach the entire length inside the oven? It's short by half a foot approximately?

Thanks for everything!!
Tony

Assembled and warming up.
I do notice the temperature comes down fairly quickly when the door is removed.

Pretty sure Simone said you need the door with the hole while burning gas.  I think that's the secondary air inlet, so there could be a safety concern.  Be carefull and double check I've been wrong before, but think I'm  correct here.
