I'm having an issue with my LPG hose/regulator on my Bollore. The part near the top that connects to the oven has a leak and it caught on fire outside the oven. I was able to shut off the tank and I tried to adjust it but every time i turned on the tank it would hiss and leak gas from the top of the hose. I want to replace the hose/regulator. Does anyone know what size or specifications I need to buy? The regulator says type 698 but that's all the info I can see. Any insight would be appreciated!

I just got and set up my gas Passione today. I did a break in warm up and I am concerned that I am either heating it wrong or that the thermometer doesn't work. I let it rip for about 15/20 minutes at full heat. Then dropped it down to medium or so, let it go for an hour in total. The bricks were 700 degrees F with my infrared temp gauge. However, the dial thermometer showed about 200-300c I was never able to have it show more than about 500 degrees F.

Does this matter, did I make a mistake, or is it defective? Thanks!

If I turn mine to high for 20 minutes, the dial thermometer will get up to somewhere in the 450-500C range. Depending on the ambient temp, it might take a few minutes more or less. I never really pay much attention to the thermometer in the oven; I'm only interested in the deck temp. I want to launch when the (Saputo) deck is just a bit over 900F and the fire is full blast. That will get me a beautiful 45-50ish second pie. I keep the door on when I'm heating and not baking, and I bake with the door off.

700F on the deck sounds about right after running it on medium for a while.

I havent gotten to 450 in that sort of time. However, it has been cold here, so that might be why. From talking with Simone, she reccomended just going longer on high to hit where I need to be. Which seems to work, I made some 50 second pies yesterday. The only real issue I am having with the gas is that the burner doesnt want to stay tight no matter what. It keeps wanting to pull out easily. I've played with that little metal thing a hundred different ways now. No real difference.

Here are some pizzas made on the new beauty! -Craig, the first ones I made where with your dough recipe, subbing in .024% IDY, I messed up bad though and over fermented because they were just a sticky pile of rubbery goo... I need to try again, currently building a starter for your recipe. I think it was too warm in the house the first time (70 Degrees). The second batch was  different recipe that I had great results with. So far except for a few small irritations like the gas burner being kinda loose, the Pizza Party cooks great!

I like the convenience of gas but the flavor from wood. These are a bit out of my desired price range but considering.
Does anyone pre heat with propane then add wood?  Do you get the same flavor as 100% wood fired?
Whats your process?

Remember,is possible use wood exclusively after removing gas burner
however we found a special design to reduce the difference of wood flavor and gas flavor. To reduce more difference i recommend to increase hydration of your pizzas, example 68-70%

I ordered a Passione on Thursday (March 8th) and it was delivered today, Monday (March 12th). I couldn’t believe how quickly it was delivered! Looking forward to setting it up and baking some pizzas!  :)

If you order Bollore with the stand, is the deck at proper height for a 5'5" person not to bend to launch or take out the pie?
