I have a Passione. For NY Style in how long do you preheat the cordierite stone on the saputo tiles and at what temp?  What temp should the cordierite  be at for launch and what temp should the oven be during bake?

With Cordierite on the Saputo, I preheat for 20-30 minutes or so. I take it up to ~800F then lower the flame and let it fall back to 650+/- and hold it there.

Maybe I missed the post in this thread explaining it, but where is a good source for larger cordierite tiles for a PP oven or are we just talking about using a standard pizza stone made of this material?
