There is a big tradition, especially in southern Italy, of making savory fritters during the Christmas holidays through to the beginning of Lent.  There are so many regional variations, such as pettole from the Apuglia region, crespelle from Calabria and zeppole from Campania, to name just a few. By far my favourite savory fritter is made with pieces of anchovy fillets and the addition of some mashed potato in the dough.
