New to the forum, so not sure if this cheese has been mentioned but fontiago has been a wonderful addition to our pizza making. It is a blend of fontina and asiago cheeses and can be found very inexpensively at your local Trader Joe's. Flavors and melting capability are excellent. We usually mix this with mozarella and Trader Joe's provolone when making our pizzas (NY style or shrimp scampi). Put some into the pie last night when making the Chicago deep dish and worked well too.
