i wana make a pizza dough like papa johns or little ceasers

hi all im new to the boards i know this topic has been covered and i can search for it, but i wana make (obviously the dough is most important) a pizza dough like LC or papa johns at home, i have a regular oven and one of those toaster/pizza ovens like from walmart, it seems like the keys to getting the result just like they do in the resturant is cheese in the dough? and it looks like dont use extra virgin olive oil? use regular? and i have seen also use butter instead of olive oil? again i have searched and i figure start a new thread because i have been overloaded with info :) LOL, all the doughs i have made they come out too bready i like that wafer texture at the pizza places, its almost very non bread like, im new at this so forgive my repeating

The members of the forum who are fans of Papa John’s pizza say that member Randy’s American style comes the closest. There are various versions of the dough recipe on the forum. I converted the basic recipe to baker’s percent form in the opening post at http://www.pizzamaking.com/forum/index.php/topic,1707.msg15310.html#msg15310. My versions were thinner versions. There is also a bread flour version of Randy’s recipe (which I have not personally tried) at Reply 19 at http://www.pizzamaking.com/forum/index.php/topic,1698.msg15290.html#msg15290. My questions is : why would you want to make a dough like LC?   ???

If it's made correctly, it's very eatable - the home addition in most cases is better than the commercial product.

Most of the commercial chains probably add dough enhancers/additives to make their dough soft and airy.

Food chemists are probably employed.

Actually, I doubt that's the case.  I can find out in LC's case (in Canada at least)--a young friend of mine works at the local LC outlet.  I had a peek back there when I was talking to him last time, and all I saw was the big mixer where they make the dough, and empty bags of flour--no additive stuff lying around.  But I'll find out more specifics next time I talk to him, if I can.

Little Caesar's doesn't use dough additives.
