Here's a pic of the DD I made for the wife last week. She wanted DD, I wanted to try a Neapolitan on the BS. I make DD on a regular basis. It's one of her favorites, while I like to try different styles.
Neapolitans were OK for a first try. Nothing to write home about. Maybe with practice.
Just plain old KAAP, no semolina, or corn meal, 50% water, .8% IDY, 16% corn oil, 5% OO, .5% salt, and .4% sugar.
