Raw Honey infused with Craig's Calabrian chili peppers

Going to try to infuse one of Craig's Calabrian chili peppers into raw honey.  Think the one Calabrian chili pepper should be slow roasted before trying to infuse it, but am not sure.

Any ideas?  Not sure of how much raw honey to use for one pepper.

Please note, the ratios here are based on the heat level of the Calabrians I grew.

Based on my experience making hot honey, I would suggest

Ingredients
1lb or 454g Honey
15.1 g Calabrian chili peppers
3.75 g White Vinegar
Pinch of salt (to taste)

Directions
Place pepper(s) into mini prep style chopper/processor...Or blender.

I have one of these, https://www.amazon.com/dp/B0000645YL/?tag=pmak-20 . Works great, easy to clean
 
Pour 15.1 g pepper mash into stainless steel pot.
Add vinegar, salt and honey into the pot
Bring up to 200F, stirring regularly. Remove from heat (Watch the fumes)
Let sit for 90 min.
Strain through fine mesh chinois/strainer.
Ladle into bottles. Et voilą!

I forgot about your honey infused experiments.  Thanks so much for the recipe and telling me how to make the honey with Calabrian peppers!  ;D  I have a mini food processor and white vinegar so should be good to go.  Is there any special kind of salt to use?  How hot is the hot honey you made?

Should be okay to do some more experiments.  My helper Liz, mother and father own the business that makes the raw honey.  She said we can trade honey for pizza.

I used Sea salt, and the ratios I gave you are half strength compared to what I originally made. I have diluted the original mix by half since then...Mighty tasty

Hope your Calabrian chili peppers still are doing fine.  If not, the offer is still there to send you some.  The smaller ones that were put in different locations have some really small peppers on them.

Thanks about telling me you used sea salt.  I have some of that at home.  Great to hear you experimented and have diluted the original mix by half since then.  At least I won't have to experiment a lot now.  ;D Hopefully will be able to try your Hot Honey on Tuesday for pizzas. unless I botch something.  :drool:

I wanted to ask one more question before I try to make your Hot Honey tomorrow afternoon.  In your instructions at Reply 1 https://www.pizzamaking.com/forum/index.php?topic=49313.msg495527#msg495527 didn't note if you removed any of the seeds in the Calabrian chili peppers or not.  Can you tell me if you removed any seeds?

Do not remove the seeds. Just grind up the whole peppers, make the hot honey mixture, cook and strain.

Took a long time for mine to reach maturity.  Think maybe started the seeds at the end of March.

Made your Hot Honey recipe late this afternoon.  Your Hot Honey tastes very good!   ;D

Showing the photos to see if I did anything wrong.  Used a little less than 2 Calabrian chili peppers.

Thanks!  I did measure the top temperature of the final mix.  It was a little over 200 degrees F.  Will try your Hot Honey out on Tuesday.  Tasted again today a few times and it is really delicious.  8) How did you eventually figure out your final recipe for the Hot Honey?  I read over your other thread and never saw you post the final formulation.  Did you post it somewhere else on the forum?

I made the formulated hot honey. A few posts later I said that you could cut this batch with an equal amount of fresh honey and it would be good.

I did exactly that...I took an original bottle and cut it with an equal amount of fresh honey, effectively making two bottles of half strength hot honey. Amazing!
So the final formulation turned out to be;

15lb of local clover honey
1/2 lb pickled homegrown Malagueta peppers
2 oz of pickling liquid to help grind the peppers into mash

Pour mash into big stainless steel pot.
Add honey
Bring up to 200F, stirring regularly.
Let sit for 90 min.
Strain through fine mesh chinois.
Ladle into bottles.
Voilą!

Nineteen 8oz bottles of chili infused honey.

Tastes...Mmmm, good
