I made the formulated hot honey. A few posts later I said that you could cut this batch with an equal amount of fresh honey and it would be good.

I did exactly that...I took an original bottle and cut it with an equal amount of fresh honey, effectively making two bottles of half strength hot honey. Amazing!
So the final formulation turned out to be;

15lb of local clover honey
1/2 lb pickled homegrown Malagueta peppers
2 oz of pickling liquid to help grind the peppers into mash

Pour mash into big stainless steel pot.
Add honey
Bring up to 200F, stirring regularly.
Let sit for 90 min.
Strain through fine mesh chinois.
Ladle into bottles.
Voilą!

Nineteen 8oz bottles of chili infused honey.

Tastes...Mmmm, good

Mmmph,

Think I understand now. 

Sorry....ten 12 ounce bottles of hot honey.

That sure was a lot of Hot Honey!

Can understand that was a bunch of hot peppers too, but 15 lbs. of Honey is pretty much.

I guess what I didn't see was when you grew your own Calabrian chili peppers and then made your Hot Honey with them.  What I saw was the Malagueta peppers.  They sure looked nice!

I'd guess that the type of honey used is probably the single factor most responsible for the finished color.

You are probably right.  I used a raw light colored honey to make Mmmph's Hot Honey.

Customers that tried Mmmph's Hot Honey really liked it.   A forum member also tasted it plain and on slices.  He also really liked it.
