I am in Napoli

Hello Friends,

I am in Napoli. First  visit was at Pizzeria Starita tonight.

Well. I expected napoli very different. Its my first day today and i walked 20km. What i saw  and what i can say now; Most of the streets are dirty. Traffic is chaos. People driving without any rules. The City is  Overcrowded.

What i can say about pizzeria Starita is; clean and fast Service.

The dough was 62%_65% hydrated. Most pobably with fresh yeast. My girlfriend and the others said , that the dough i prepare is more digestible than this one.

Mozarella was good. But the buffala mozzarella was impressive. I tasted a lot of italian buffala mozzarella in germany and sardegna but this one from napoli ( most probably its fresh) is very very different.

Wish to work with one of those beautiful napoletana ovens someday. The fire is very inviting and it gives the pizza beautiful smokey flavor that electric oven can never give

I didnt eat at Don Antonio. But i guess the dough is the same. The only difference must be the ingredienst.

When you first visit Naples it does seem a little chaotic however over time you realise this is how things work there. Almost an order to the chaos. Embrace the culture and you will discover a wonderful city ....

Sure it is a beautiful city. But throwing trash everywhere? What kind of human being would do that?  Maybe in the past was not that dirty i dont know , but now it looks like gipsy city for me. Its fast impossible to see a car without any accident. They hit even when they park and walk away as if nothing happened. Its like bumper cars in a luna park

Sorbillo is absolutely better than starita. High hydrated dough and very soft. I would say %66_%68. Pizza is quite big 33_34cm. i guess dough balls weigh between 270_300gramm. They dont care about  big puffy cornicione. Gustarosso san marzano tomatoes.  They use pecorino romano as grated cheese.

Had to wait 30min outside till one table was free and another 30 minutes for 4 pizza. Quite bussy everyday

i was in napoli 3 weeks ago i didnt find it to be very dirty. the pizza places have the worst hours  :-D

Awesome!! Where i was in Napoli a few years ago i thought it was the worst driving situation next to Beijing. The streets were dirty but the pizza was fabulous. If you have time drive to Salerno, beautiful!
