Hello.

I read , sorbillo mixes tipo 0 di agricoltura biologica and integrale bio flours %85/%15 to make dough

The dough was close to %70 hydro. Anyone know how he prepares the dough?

I was watching a few youtube videos of him and i captured o few bottles of olive oil near oven. Someone knows this brand?
