You could just look at the topping combos that he serves at his restaurant.  The fig and prosciutto seems to be the main thing (not a particularly original pairing IMO) and he stretches his pies into oblong shapes rather than round.

Never heard of the guy until recently when he was accused of sexual harassment. He's one of those celebrity chefs that jumped on the artisan pizza bandwagon, apparently.

He made his name in Boston/Cambridge back in the 80’s. I first heard of him when he was starting out at a place called Michaela’s in Cambridge. He & his wife then opened their own place (Olive’s) that was really successful. He then went on to NY, Vegas, etc. & created quite an empire. I never knew him to be a pizza guy specifically, but a talented italian trained chef. I also heard about the harassment stuff, plus a few personal accounts from women in my industry (wine) who had interacted with him.

In my working days I was a broadcast engineer at the local CT public broadcasting network. We produced a show with English. Don't know much about him but the show did have some followers. Found this on Amazon which was probably the companion book.

The ingredients break down into bakers percentages as follows:

Whole Wheat Flour 6.43% + AP Flour 93.56% (30.14g + 438.06g)
Water - 83.88% (392.74g)
Salt - 1.03% (4.81g)
Cake Yeast - 1.44% (7g)
Sugar - 1.7% (8g)
Oil - 1.91% (8.96g)

It's basically a 2-hour emergency dough that is rolled out.  Meh.
