Fructans vs Gluten

I'm posting this thread here as it has a reference to sourdough. 

I ran across some articles recently suggesting that fructans could be the cause of digestive issues for some people instead of gluten.  I'm not proposing that these are authoritave reads, but it might be worth it for folks to check out on their own.  It is reported that the fermentation process of sourdough reduces/eliminates the fructans which to me could be a major factor in why sourdough is considered more "digestable" that yeast-based doughs.  Since wheat is a major source of fructans, it possibly explains why people experience benefits when going to a gluten-free diet as they are also eliminating fructans.
