Thanks Larry.  When opening initially I preserve a small rim of about 1/2" or less.  I then sauce and cheese it to that edge as Parallei does.

My first Mama's too crust clone attempt.   This was excellent and really close.  I need to make a few more tweaks but this is going to make a great pan pizza crust.  The reheat was mind blowing.  Last pic is their crumb.

Tell franco you're a member of the pizzamaking forum, he's happy to talk shop.   also, if you can deal with the carbs, absolute bagel, arguably the best in nyc, is one block north. Unfortunately, we won't be in nyc that day or I'd meet you. I'll be back on thurs if you're still around?

anyhow, with a little notice, maybe we can put together a tour next time you're in town!

I leave Wednesday but I'm usually there once a month. Pizza tour is always good!

Hans- I liked the squares better than the slice (which was also good). There was also a garlic roll that I liked a lot too.

stopped by pizzatown usa for the first time, it was wonderful! Turns out it was on the way from home one of my clients in princeton, I'd probably be dead from overeating if I knew about it before retirement.

QD- I stopped by Pizza Town last weekend. Slice was a little over sauced but still really good. Hope you got a fried calzone too. They are great. My kids love their zeppole too.

we did have the fried calzone, it was delicious but I was a little disappointed it wasn't fried fresh for us. I heard the zeppole are great but with three of us sharing a pie and a calzone, decided to pass. a  side note, we arrived at 11pm on the way back from southern jersey, can't think of a better late night spot for dinner, they're open until 1am!

I hear you on the sauce, but at this point in my pizza education, not sure what oversauced means. Maybe more sauce than most places?  I guess it's their house style and it obviously works for them.

By over sauced I meant too much. The cheese slid a little and the crust/sauce/cheese balance was a little off compared to past visits. I was there at about noon. They were just getting going so the calzones and Zeppole we had were pretty much made to order. I may have to try making my own fried calzones. Last time I was in Whole Foods they had some Calabro ricotta. A little bit of ham and we're in business. But that could be a dangerous path to go down.

Try it.  I did it several years ago.  It was really good, but I like baked dough just fine and it requires a lot of oil in a big pot.
