They are all amazing, but his vodka square is just ridiculous.  Its my favorite square I have ever had anywhere.

Thanks, QD! I think I can do something like that. I've never made a vodka sauce, but I'm thinking I can figure it out. Fortunately, I've always got some vodka and tomatoes on hand.

Double-fermented? do they mean biga/poolish followed by final fermentation? I have never seen the term so I unless fermentation on our pages here....marketing-speak?

I don't think that they use biga/poolish. Technically is a bulk proof and then ferment in balls double fermented?

They are thinking winter
 2021 to open. Never been to the original myself. Not that long ago I heard the correct pronunciation of the name. Had been saying it wrong in my head for years. I dont get to the city too often but I'd like to try it sometime. I'd like to get back to Song e Napule too. They changed ovens. I've only been once but I'd like to see if the new oven changed the pizza.

Hopefully someone else that has been to the original da Michele could make the comparison. I'd just say it was as good so you'd come back. This pizza tour was the best reason I've ever had to blow off a day of work.
