WFO - Poland, Silesia
« on: May 23, 2018, 10:50:08 AM »
Hi,

My name is Simon, I’m from Poland (Silesian province).
It's almost a year since the first firing up of my WFO so it's about time to share photos and information from the construction process.
Thank you all for their information and suggestions, especially: ImmortalJellyfish, drogus, sub, blu_in_green, MotoMannequin, stonecutter.

Basic information about my oven:

Internal diameter - 80 cm (31,5 inch) - Saputo Biscotto
Internal height - 36,5 cm (14,37 inch)
Mouth width - 42 cm (16,54 inch)
Mouth height - 23 cm (9,06 inch)
Walls thickness - 6.5 cm (2,56 inch) - sailors course
Warming time - 1.5 h
Baking at min. 430 C (800 F) - floor, 550+ C (1000+ F) - dome

I will successively publish photos from subsequent stages of construction. Stay tuned.

Thanks spaddl.

I think my oven works quite well. Preheating time is about 1,5h and I can easily bake at 430C (floor). Biscotto is ideal for Neapolitan style because it doesn’t burn bottom of pizza.

After the evening pizza party, next day the oven has a temp. of 200 - 250C, so I can bake chicken for example.
Later in the evening the oven still has about 100C, so I put „zapiekanka” (bread with leftover ingredients from pizza). Then I can make dried tomatoes.

We (me and ImmortalJellyfish from forum) ordered Biscotti from here:

Ah ok, I see. How much was it fit the biscotto? I only know of some offers that had pretty high shipment costs (to Germany).

Why did you put the soldiers like that? Most of the Neapolitan ovens seem to have them turned around by 90° I think (the small high surface faces inward). (If I had to guess I'd say to have a faster heat up time, but less heat "storage", is that right?)

Biscotti costs 80 EUR, but You have to make an order by phone or email and organize transport yourself.
You can also order here, in simpler way, I think:
https://pizzapartyshop.com/en/accessories/wood-fired-oven-floor-biscotto-saputo.html

You're right. I laid bricks in sailors course to achieve shorter heat up times.

Looks like a very well made oven.

How is the heat retention? What would be the oven temperature, the next day of you had pizza the night before?
