Hi, Bill the pizza looks really good.Is that caputo flour or something else? if caputo what did you do to get it to work with 70 percent water? How long was your bake?

Thanks, Larry. Caputo flour - just a few stretch and folds. I'm guessing bake was around 75 seconds. I've read multiple times that Caputo is meant for lower hydration and when I use my WFO, I'm usually around 62%. But it really does well in the intense heat of the Breville.

I have just had my second stone crack in the Breville Pizzaiolo. I love this unit, but replacing a cracked stone every couple of months is going to get old fast. Have others been experiencing this as well? I would love to be able to replace this with a Baking Steel sized to fit.

 i think this is going to be an issue with this oven mine just cracked. looking at the crack it is discolored half way thru. i must have been partial cracked allowing residual cooking material to penetrate. i use it cracked and there is no ill effects.
 have tried Breville customer service and have caught them at busy times.

I would love to be able to replace this with a Baking Steel sized to fit.

I don't think you'd have good results with a baking steel in this oven.

I have a crack in mine. Noticed it when I took it out to carefully scrape residue off using Bill's suggested plastic cleaning scraper. The crack goes all the way across the stone, but I'm curious how long I can keep using this without it totally splitting apart. Mine is not discolored, and if I didn't take it out of the oven to clean, might not even be visible. I bet I have only made about 30 pizzas in this oven.
I am thinking that I need to contact Breville, because if it does split totally, the oven would be out of commission for who knows how long while waiting for another stone, so it is better to be pro-active.

Contacted Breville today. They are aware of some breakage. seems that that front lip going down puts pressure on the center of the stone. They said they would send a stone to me and i was able to keep the original so i could continue to use the oven. all they asked for was serial number and a picture of the stone. I submitted both and the stone is on its way. they had recommended cooling the stone completely before cleaning.also just scrape and wipe the stone in the oven.

Any offer of a free extended warranty for the troubles?  Any charges for the replacement stone? What happens when the next one breaks in a few months , they keep sending more stones free of charge?  At nearly $1000 for a counter top appliance I would be PISSED.

I think the warranty is 2 years. they were willing to replace without return. it works fine cracked. i think they would honor the warranty if the stone cracked again.

Ok Thezaman are You happy with the Oven aside from the stone breaking quickly?  Anyone know if Breville will eventually sell it elsewhere aside from Williams Sonoma?  I have reached out to Amazon, Best Buy and Target.  I just cant see spending this much on a China made small appliance. around $500 would be my Psychological limit.

 Not sure you want to go this route but a William Sonoma charge card new customer will get 20 percent off. Thatís 160 off of 800 dollars.
  Seems somewhere in these pages there is s reference to eventually opening the oven to other vendors.

They closed that loophole.
20% off does not apply to sale items, and the Breville has been "on sale" since they introduced it.

Did WS recently change that process? I got my Breville 2 months ago with the new WS credit card and purchased other items at the same time that were on sale. Received 20% off everything. They did tell me that Breville products are not included when they run store sales.

First pies I've baked in awhile.  The more even browning is a different result for me.  Of course I changed up two things so I don't know what caused it. :o

The dough was meant to go 24 hrs at room temp but when I got up in the morning the balls were blowing out and needed to go into the fridge.  So it was 14 hr RT, 8 hrs in the fridge and 2 hrs at RT.  I used the manual mode with the LarryStone and preheated it longer than usual with the bottom at 725F and the top at 750F in even heat mode.  I switched to the top crust only mode a few minutes before baking.  I'm thinking the oven was hot enough that the top element wasn't on full bore during the bakes.  Anyway, tasted good.

To me, that would indicate that the stone is failing in tension.  Maybe they need to think about adding something like those stainless steel needle thingies as reinforcement.  My stone still seems to be in good shape.

I didn't time the bakes - just pulling when the alarm in the head goes off. I will say this about crispy: the Breville crusts seemed a little crispier (and tastier) on the bottom while the WFO ones were crispier on the edges. But the difference was very small.
